Need a more exciting salad this “Salad Season”? Try this simple but full of flavour salad. Easy and with the most mouth watering dressing to go with it.
SERVES 5
INGREDIENTS
- 1 bunch of silverbeet, stalked and finely chopped
- Coriander, finely chopped
- Parsley, finely chopped
- 1/2 red onion, finely sliced
- Cherry tomatoes, halved
- 1/2 avocado
- 1/2 cup buckwheat
- 1tsp paprika
- 1pinch of chilli flakes
- 1tbs ghee
SALAD DRESSING
- 3tbs peanut butter or almond butter
- 3tbs lemon or lime juice, freshly squeezed
- 2 cloves garlic
- 5tbs tamari sauce or soy
- 2tbs sesame seed oil
- 1tbs honey
- 2tbs water
METHOD
- Pre heat the oven to 170 degrees fan forced.
- On a lined baking tray spread out the buckwheat kernels
- In a coffee cup melt the ghee in the microwave for 40secs and then spread across the buckwheat and then add the spices on top
- Place in the oven for 15-20mins
- Slice the green and lay them on the platter first
- Add the vegetables next
- For the dressing put all the ingredients into a blender and whiz on high for 1-2mins
- Lightly drizzle over the salad
- Enjoy!
