  1. Prepare the Protein: In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks. Season with salt and pepper to taste. Once cooked through, transfer the turkey to a plate and set aside.
  2. Sauté the Veggies: In the same skillet, add another tablespoon of olive oil if needed. Add the diced bell peppers and red onion. Sauté until the vegetables are softened and slightly caramelized, about 5-7 minutes. Season with salt and pepper to taste.
  3. Warm the Tortillas: Heat a separate skillet over medium heat. Warm each tortilla for about 15-20 seconds on each side until pliable. Stack the warmed tortillas on a plate and cover with a clean kitchen towel to keep them warm.
  4. Assemble the Tacos: Take a warm tortilla and layer it with the cooked ground turkey, sautéed bell peppers and onions, sliced avocado, diced tomatoes, shredded lettuce or spinach, and chopped cilantro. Squeeze fresh lime juice over the filling.
  5. Add Optional Toppings: If desired, add a dollop of Greek yogurt or sour cream, a spoonful of salsa, and a sprinkle of shredded cheese on top of each taco.
  6. Serve: Arrange the assembled tacos on a serving platter or individual plates. Serve immediately with extra lime wedges on the side for squeezing.
  7. Enjoy: Invite your guests to dig in and savor the delicious flavors of these wholesome turkey tacos. Serve with a side of rice and beans or a simple salad for a complete meal.
