By far the most nourishing and mouth watering summer time salad you will ever make. Full of flavour and nutrients you can not go past this bad boy!
SERVES 6-7
INGREDIENTS
- 1/2cup quinoa, rinsed and cooked
- 4 large silverbeet leaves, finely chopped
- 1cup hazelnuts, oven baked for extra NUTTY!
- 1cup pomegranate seeds
- 2 bunches of flat leaf parsley
- 2 bunches mint
- 400g diced tomatoes, fresh
- 1 small Spanish onion
- Zest of a lemon
- Juice of a lemon
- 1/4 cup olive oil, optional
- 2tsp all spice
- salt & pepper
METHOD
- Pre-heat the oven to 170 degrees and place the hazelnuts on a lined baking tray and place in the oven for 20mins
- Cook the quinoa in a saucepan with a cup of water and bring to a simmer and cook for 10mins. Keep stirring until all the water has gone then turn it off and allow to sit for 5mins. Fluff with a fork and let it cool down before adding to the salad
- Chop the parsley, mint and silverbeet finely and place in a large salad bowl
- Dice the tomato and onion
- Add the rest of the ingredients to the top of the greenery
- Presto! One very nourishing and healthy side dish for Summer
