Want tasty and a family favourite? These tacos are very impressive and relatively quick, minus the 6hr, slow cooked lamb
SERVES 10
INGREDIENTS
- Spicy, mouth watering lamb from previous post
FILLINGS
- Avocado guacamole
- 1 avocado
- sea salt
- 1/2 lime, freshly squeezed
Sautéed Vegetables
- 1 whole brown onion, sliced
- 1 whole red capsicum, sliced
- 1tbs olive oil
- 1tsp smoked paprika
- 1tsp cumin
Fresh herbs
- fresh mint
- fresh coriander
METHOD
- Cook the slow cooked spicy lamb, see previous post
- Slice the onions and capsicum, coat them in the spice mix
- Put them in a hot fry pan
- Spoon out the avocado and out it in a bowl with the lime and salt, mash with a fork
- Heat the tortillas in a fry pan with no oil
