SERVES 6
INGREDIENTS
- 1.5kgs beef brisket
- 1tbs olive oil
- 3 cloves of fresh garlic
- 1 onion, finely sliced
- 5 kale leaves, chopped
- 2 cups beef stock
- 6 bay leaves
- 1 cup red wine
- 2 cups water
- 3 cups tomato puree
- cracked salt and pepper
- Fresh parsley
METHOD
- Place the brisket and all the ingredients except for the onion and kale in the slow cooker and cook for 6hrs
- After 6hrs prepare an oven proof dish with the chopped kale which is removed from the stalks and layer it with sliced onion
- Lay the brisket on top and add 3 cups of the sauce that it came from
- Place foil over the top and place in the oven at 170-180 degrees for 30 mins and than take the foil off for a further 30mins
- Remove from the oven and serve with mashed potato or sweet potato
