INGREDIENTS
- 3/4 cup shredded coconut
- 1tbs coconut sugar
- 1.5 tsp baking powder
- 1 pinch sea salt
- 1 cup GF flour
- 2tbs GF uncontaminated oats
- 2 eggs
- 2tbs melted coconut oil
- 1tbs maple syrup
- 1cup almond milk
METHOD
- Lightly toasted the shredded coconut in a non-oiled, non-stick pan
- Once the coconut is toasted add the sugar to it and set aside
- Mix all the dry ingredients including the coconut & sugar mix
- Than add the wet ingredients
- Whisk well
- in a lightly oiled non-stick fry pan, pour small portions and cook 2mins/side
