This has been one of my favourite mince meals to date. Full of flavour, texture and goodness.
SERVES 5
INGREDIENTS
- 1kg pork mince
- 1 whole deseeded red chilli, sliced & diced
- A handful of fresh coriander
- 1/2 fresh pineapple
- 200g fresh beans
SATAY SAUCE
- 2tbs peanut butter
- 1.5tbs white miso paste
- A few drops of water
- 1tbs olive oil
METHOD
- Cut the pineapple into small pieces and fry it off in a lightly oiled fry pan add a little water at the end, take out the pineapple and set to the side
- Re-spray the fry pan and fry off the pork mince
- Make the satay sauce and mix well
- Slice and dice the red chilli into fine pieces and add to the mince
- Add the satay sauce
- Top and tail the beans, cut them in half and microwave them in a little water for 2mins
- Mix the sauce in well and add the beans, pineapple and fresh coriander
- It’s ready to serve!!
