This is a very decadent slice that I make for special occasions. No baking necessary and very easy to make.
SERVES 12
INGREDIENTS
FOR THE BASE
- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 3 cups almond flour or blanched almond meal
- A good pinch of pink salt
- 1/2 cup chocolate chips (sweet William)
FOR THE GOOEY SALTED CARAMEL
- 1/2 cup cashew butter or smooth peanut butter
- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 1/4 tsp pink salt
FOR THE CHOCOLATE TOPPING
- 1 cup chocolate (I used Pico chocolate from Woolies, it is vegan)
- 2tbs coconut oil
METHOD
- Place all the dry ingredients in a large mixing bowl and stir together
- Melt the coconut oil in a coffee mug in the microwave for about 45-1min and than add the maple syrup
- Wait until the coconut oil and maple mixx has cooled before place it into the dry ingredients otherwise your chocolate chips will melt
- Line a baking tray with baking paper and add the base ingredients to it, evening it out and than place it in the fridge to set
- For the salted caramel part boil a saucepan of water and place a glass bowl on top (heat resistant) and add all the ingredients constantly mixing until it is well combined
- For the chocolate top use the same method as the caramel centre
- Enjoy with friends and family
