NEW & IMPROVED SWEET POTATO SHEPARDS PIE

Upgraded, one of the top recipes from 2020. A more flavoursome & wholesome meal for the family to enjoy and great for meal prep.

SERVES 6-8

INGREDIENTS

METHOD

  1. Pre heat oven to 180 degrees, fan forced
  2. Heat a large fry pan with a splash of olive oil and garlic
  3. Bring a large saucepan of water to the boil and start to peel your sweet potatoes. Cut the sweet potato into cubes and once the water is boiling add them in
  4. Add the onion and fry until it goes translucent
  5. Add the beef mince and cook it through
  6. Add the tomato paste, herbs, bone broth and then the peas
  7. Once the beef mince is cooked turn it off and let it sit to the side
  8. Get a large baking dish ready for the pie to go into
  9. Once the sweet potato is cooked, drain it and mash with nutalex or butter and cinnamon
  10. Add the mince to the baking dish and than evenly spread the sweet potato mash on top, add to the oven and bake for 35-40mins
  11. Enjoy!
