ITALIANO SQUID WITH OLIVES

A comforting winter dish that is very high in protein and will also raise an eyebrow..la de dah!

SERVES 4-6

INGREDIENTS

METHOD

  1. Wash the squid down first and pat dry with paper towel and cut into rings
  2. Heat the olive oil in a large saucepan over medium heat
  3. Add the shallots, garlic and parsley and sweat these for a couple of minutes
  4. Stir in the squid rings and season with pepper and salt and turn the heat up for 1 minute
  5. Add the white wine and allow the alcohol to cook off
  6. Add the tomatoes and olives, cover with the vegetable stock, not alot just cover the squid rings
  7. Place the lid on and reduce the heat to medium and cook for 15mins
  8. Serve straight away and enjoy this winter warmer
