HEALTHY LUNCHBOX MUFFINS

These are great for the kiddies lunchbox or your own!! Keep them in the freezer and pull them out as they are needed.

INGREDIENTS

METHOD

  1. Preheat the oven at 180 degrees.
  2. Place your patty pans in a 12 hole muffin tray
  3. Place all ingredients in a large mixing bowl or a food processor, I use electric hand beaters however you can also use a blender
  4. Evenly seperate the mixture in half
  5. Add blueberries to one half and choc chips to the second half
  6. Spoon the mixture into the patty pans and cook for 20-25mins or until golden brown
  7. Allow to cool on a wire wrack
