Grilled Steak with Baked Sweet Potato Fries and Sautéed Vegetables

Instructions:

  1. Prepare the Steak:
    • Preheat a grill or grill pan over medium-high heat.
    • Rub the steaks with olive oil and season generously with salt and pepper.
    • Grill the steaks to your desired doneness, about 4-5 minutes per side for medium-rare, depending on thickness. Remove from heat and let rest while preparing other components.
  2. Make the Baked Sweet Potato Fries:
    • Preheat your oven to 220°C.
    • Toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
    • Spread the fries in a single layer on a baking sheet lined with parchment paper.
    • Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
  3. Sauté the Vegetables:
    • While the fries are baking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the capsicums, zucchini, onion, and minced garlic to the skillet.
    • Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp. Season with salt and pepper to taste.
  4. Assemble and Serve:
    • Arrange the grilled steak on a plate alongside the baked sweet potato fries and sautéed vegetables.
    • Garnish with fresh herbs if desired, and serve immediately.
