This dish is full of flavour and is super easy when serving larger number.
SERVES 6
INGREDIENTS
- 500g or (I cooked this with 1kg of mince) pork mince
- 1 large sweet potato
- drizzle of olive oil
- 1/4 cup tamari sauce
- sprinkle of coconut sugar
- 2tbs sesame seed oil
- garlic & ginger
- fresh chilli – optional
- 3 spring onions – chopped
METHOD
- Pre-heat the oven at 170 degrees fan forced and cut the sweet potato into thick 1.5cms pieces
- drizzle with a little olive oil and bake on a lined baking tray
- Roast in the oven for around 40-45mins
- Meanwhile in a non-stick fry pan fry off the olive oil, spring onions, ginger & garlic than add the mince
- Once the mince is starting to colour add the two sauces, once that is mixed through well sprinkle a little coconut sugar to caramelise the mince mixture
- Once the mince is nearly done add half a small chilli if you wish, the longer you cook the chilli the hotter it will be so put it in last!
- Once the sweet potato is done, line a platter with the potato and than add the mince mixture
- Feel free to make it your own, add diced avocado to the top of it just remember that will than increase the calories
