You will not want to eat sweet potato any other way after trying this! A great dose of fibre, vitamins B, C + D as well as magnesium.

INGREDIENTS
- 1.5 large sweet potato
- 1/2 melted nutalex
- 1/4 cup maple syrup, I use zero calorie syrup from Woolworths
- A generous pinch of dried mixed herbs
- A generous pinch of smoked paprika
- 1tsp garlic, minced
- pepper and salt
METHOD
- Pre heat the oven to 180-200 degrees, fan forced
- Cut the sweet potato into 1cm rounds and than quarters and lay them on a baking tray
- Melt the butter in the microwave
- In a large mixing bowl add the butter and the rest of the ingredients
- Pour over the sweet potato and add to the oven for 25-35mins
