BANANA ICE CREAM
Ingredients:
- 4 ripe bananas
- 1 tsp vanilla extract (optional)
- 2 tbsp almond butter or peanut butter (optional)
- A splash of almond milk or any plant-based milk (optional, for creamier texture)
Optional Mix-ins:
- Dark chocolate chips
- Chopped nuts (almonds, walnuts, etc.)
- Fresh berries (strawberries, blueberries, etc.)
- Unsweetened cocoa powder (for chocolate flavor)
- A handful of spinach (for a green boost—won’t taste it!)
Instructions:
- Prepare the Bananas:
- Peel the bananas and slice them into thin rounds. Place the banana slices in a single layer on a baking sheet or plate lined with parchment paper.
- Freeze the banana slices for at least 2-3 hours or until completely solid.
- Blend the Bananas:
- Once the banana slices are frozen, transfer them to a high-speed blender or food processor. Blend until the bananas break down into small pieces, then scrape down the sides of the blender and continue blending.
- Keep blending until the mixture becomes smooth and creamy like soft-serve ice cream. This may take a few minutes, so be patient!
- Add Flavorings:
- If you want to add vanilla extract, almond butter, or plant-based milk for extra creaminess, do so now and blend until combined.
- If you want to make chocolate banana ice cream, add unsweetened cocoa powder and blend again.
- Serve or Freeze:
- You can enjoy the banana ice cream immediately as soft serve. If you prefer a firmer texture, transfer it to a container and freeze for another 1-2 hours.
- If adding mix-ins like chocolate chips, nuts, or berries, stir them in before freezing.
- Enjoy:
- Scoop the ice cream into bowls, and enjoy a delicious, healthy treat!
