These are so bloody good that it is unfair to restrict them to one day of the year! These are an all year round biscuit for any Australian household.

INGREDIENTS
- 1 cup ‘Uncontaminated’ oats
- 1 cup desiccated coconut
- 1 cup spelt flour
- 1/4 cup coconut sugar
- 1/4 cup extra virgin olive oil
- 1/4 cup pure maple syrup
- 2-3 tbs hot water
- 1/4 tsp bicarb soda
METHOD
- Pre heat the oven at 160 degrees, fan forced
- Combine oats, coconut, spelt flour, coconut sugar and bicarb soda into a mixing bowl
- Add oil, maple syrup and the hot water and mix together well
- Line two baking trays with baking paper
- Make small balls and place on the trays and than flatten with your palm
- Cook for 20-30 mins, sometimes they may need longer
