INGREDIENTS
- 2-3 eggs
- 1 spoon of olive oil
- 1 zucchini, spiralled
- 1 carrot, spiralled
- dried herbs, Zaatar, chilli flakes, black sesame seeds, garlic and pepper and salt
- fresh parsley
- Coconut amino sauce
METHOD
- Spiral the carrot and zucchini first and add to a bowl
- Add the dried herbs and the olive oil, give it a good toss with your hands
- Place in a fry pan and make three small sections for the eggs to sit
- Crack the eggs into the small sections you have made and place the lid back on, keep it on a low heat the whole time.
- When ready to plate than add the fresh parsley and amino sauce
