A healthy twist on the eggs benedict. Something to fuel you through your day.
SERVES 1-2 (Pending on calories)
- 1 gluten free bagel – Woolworths brand
- 3 eggs
- Vegan or non vegan cheese
- Smoked salmon
- fresh parsley
- 1/2tsp garlic, minced
- 1/2tsp chilli flakes, semi dried
- coconut oil spray
- Scramble the garlic, chilli and eggs first and cook in a low heat pan that is lightly oiled.
- Add the cheese just before you take the eggs out of the pan and fold it through
- Cook the eggs for only 2-3mins
- Toast the bagel
- Chop the parsley
- And construct a nourishing Eggs Bene on the plate!!
