This is my ultimate meal prep meal for lunches through out the week! You know that feeling when you get super excited about warming up your lunch because it is just so enjoyable…this is that meal for me.
Serves 5
INGREDIENTS
- 1kg chicken mince
- 3tbs tamari sauce
- 1tsp ginger
- 1tsp garlic
- 1tbs oyster sauce
- 1tsp chilli flakes
- 3 spring onions
- 1tbs sesame seed oil
- 1tsp coconut sugar
- Handful of chopped almonds
- 3tbs dried cranberries
- Fresh coriander or parsley or both
- 1 whole, large sweet potato
- 1tbs olive oil
METHOD
- Pre heat the oven to 180 degrees, fan forced and lightly coat the sweet potato in olive oil and place on a lined baking tray and bake for 40-45 mins
- In a large fry pan add a little olive oil, garlic, ginger and the chicken mince. Break it up into fine pieces with a flat wooden spoon and cook the majority of the meat and then add the rest of the ingredients except for the parsley/coriander, add the cranberries last. Roast off the almonds in a small fry pan before adding them to the mixture
- Once the sweet potato is cooked lay it on the plate and top it with the chicken mince mix and then add the coriander last.
