SWEET POTATO & BEETROOT CHIPS
INGREDIENTS
- 1 whole sweet potato
- 3 whole beetroots
- Spray coconut oil
METHOD
- Turn the oven onto fan force around 180-200 degrees (HOT!)
- Peel and cut the sweet potato and beetroot into long, thick matchsticks
- lay them out on a lined baking tray and spray lightly with coconut oil
- Place in the oven for 35-40mins
Orange & Pomegranate Salad
INGREDIENTS
- 3 oranges
- 1 whole pomegranate
- 1/2 spanish onion

METHOD
- Peel and slice the oranges into thin slices
- Cut the pomegranate in half and start de-seeding, getting the seeds away from the white skin
- And do the same with the onion, peel and slice into thin slithers
- No dressing needed as the oranges provide enough juice to do so
Avocado chips
INGREDIENTS
- 1 avocado
- 1/2 cup desicated coconut
- Spray coconut oil
METHOD

- Cut the avocado in half and then again, length ways to get a long chip like shape
- Place the desicated coconut on a small plate
- Coat each piece of avocado in the coconut
- Place in a hot, lightly oil fry pan. turning every 1min or until browned
