Need to make those summery salads a little more enticing?? Try it with marinate salmon fillets…
INGREDIENTS
SERVE 2
MARINATED SALMON
- 2 salmon fillets – best from the deli section in Woolworths or Coles
- 1tbs sesame seed oil
- 2tbs tamari sauce
- 1tbs raw honey
- grated ginger and garlic
- chilli flakes – optional
SALAD
- 1 bag mix lettuce leaves
- 1 avocado
- fresh coriander
- 2 radishes
- 1 sml container heirloom tomatoes
- 1 wedge fresh lime
METHOD
- Mix the marinade ingredients together in a small tupperware container and shake well.
- In a bigger Tupperware container add your salmon fillets and the marinade mixture and allow to sit for at least 1hr.
- Cut and mix together the salad mix.
- In a non-stick frypan add the salmon, cook 4mins each side.
- Add the salmon to the salad mix and serve.
