A great vegetarian dish or a lovely meat free dish for those who are not vegetarian.
- 120g edamame pasta (Any health food shop will sell it as well as Woolworths)
- 1 spoon of *homemade pesto (see previous blog)
- cherry tomatoes
- 1 tablespoon of pine nuts
- I used a vegan parmesan to sprinkle over the top (also from Woolworths or any health food store)
Bring a saucepan of water to the boil and add your bag of edamame pasta (you will only need roughly 120g per serve when platting up) the rest can be used for meal prep. The pasta will only need 8mins in boiling water. Drain off the water and add 120g to your bowl, add the homemade pesto and quarter the cherry tomatoes and distribute evenly. Add the vegan parmesan and pine nuts last. I like to pan fry the pine nuts a little to really bring out a robust nutty flavour. PRESTO!
