Need a 3pm “pick me up” that isn’t a meaningless muesli bar??
- 2 eggs
- 1/4 cup maple syrup
- 1.5 cups of natural peanut butter
- 1/2tsp vanilla essence
- 1/4 teaspoon sea salt
- 20g protein powder
This is a very sticky batter. Preheat the oven to 200 degrees. Use an electric mixer and mix the eggs and maple syrup together.
Add the peanut butter, vanilla and sea salt.
Whisk again until the batter is sticky and thick.
On a lined baking sheet, use an ice cream scoop or teaspoon (and wet hands to make the handling a lot easier) to make 16 cookies or 12 for bigger cookies.
Get a small cup of water to dip in a fork and lightly press the top of the cookie flat.
Bake the cookies for 10mins.
