Looking for something that will warm the soul from the inside out!? Try this creamy cauliflower soup.
- 1 red onion
- 4 garlic cloves
- 1/2 head of a large cauliflower
- 2 fennel bulbs chopped and quartered
- 500g of stock (your choice)
- 3tbs hummus (this is also optional)
- 1tsp of turmeric
- pinch of cinnamon
- 1tsp sage leaves
- pinch of fennel seeds
- 2tbs tamari
- 2tbs lemon
- 1 knob of peeled ginger
Preheat oven to 200 degrees. On a lined baking tray place the onion, garlic cloves, cauliflower and the fennel. Bake for 30-35mins until crispy golden. Remove from the oven and place in a blender with the remaining ingredients. Blend until creamy.
Pour into a heavy based saucepan and place over a low heat allowing the flavours to blend. Season with pepper and salt. Optional you can serve with a sprinkle of fennel seeds.
