Do you ever crave a delicious & crunchy chocolate chip cookie? Do you see the ones on Instagram and want to make your own? Well now you can, they are oh so easy!
INGREDIENTS
- 2 cups almond flour
- 1/2 cup coconut oil
- 1/2 cup rice malt syrup
- 1/4 cup almond milk
- 2.5 tbs natural peanut butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup choc drops (I use sweet William’s dairy free from Coles)
METHOD
Preheat the oven to 190 degrees and line the baking tray with paper. in a mixer or larger bowl, combine the coconut oil, rice malt syrup and then add almond milk and vanilla essence.
In a seperate bowl mix flour, baking powder, soda and salt together and pour into the mixer with the peanut butter.
Mix thoroughly to a cookie dough consistency and mix through the chocolate chips at the end. Using your hands, roll mixture into small balls and place onto the baking tray while pressing lightly on each with a fork.
Bake for ten minutes and let cool! Enjoy!
