This is my all time favourite meal to make when the days get colder, this is my “go to” dinner.
INGREDIENTS
- 100-200G lean beef mince
- 1 onion
- Nutalex (dairy free butter)
- minced garlic
- 3-4 cups spinach leaves
- 2 cups frozen peas
- 4 tbs worcestershire sauce
- 3 large sweet potatoes
METHOD
Pre heat the oven at 180 degrees. Boil a saucepan of water and peel the sweet potatoes and cut them into small chunk, add them to the boiling water and cook for about 20mins. Fork a piece of sweet potato to be sure they are cooked well. Add nutalex (dairy free butter) and mash well. Set the potatoes aside with the lid left on. Fry off diced onion, garlic and the mince add salt and pepper for flavour. Once the mince is browned add the peas, sauce and at the end before it is nearly done add the spinach. Transfer the mince mixture into an oven proof dish, add the mashed sweet potato to the top of the mixture and bake for a further 30mins. Presto!
