INGREDIENTS
- 550g calamari rings
- 1 cup buckwheat flour
- 1/2 cup shredded coconut
- splash olive oil
- 1tsp crushed garlic
- pepper & salt
- 1/2 lemon (juiced)
- pinch chilli flakes
- hemp seed oil to cook in
METHOD
Marinate the calamari rings in a splash of olive oil, crushed garlic, chilli flakes, lemon juice and pepper & salt. Allow them to sit for at least 30 mins. On a dinner plate place the buckwheat flour and shredded coconut. remove the rings from the fridge and roll in the flour mixture. Start to heat the pan with hemp seed oil, enough for the rings to sit in. Place the battered calamari rings in and flip them over once they have browned. 3-5mins. Place on a paper towel to drain. Great for meal prep as they keep very well in the fridge. I had these with mash sweet potato and loads of broccoli!! Presto.
