A great autumn breakfast with a good immune booster added in for an extra va-va voom!
INGREDIENTS
- 4 eggs
- 1/4 chopped red onion
- fresh parsley
- cherry tomatoes
- spinach
- chilli flakes
- 1tsp turmeric
METHOD
Mix eggs, parsley and spices in a bowl and add to a lightly oiled pan. Once the bottom of the omelette has set add the chopped cherry toms & spinach and fold the omelette in half. Let it cook for another 4mins and serve. I like to drizzle balsamic vinegar over the top to serve.
