Feel like you miss out when it comes to eating out, missing the old baked potatoes piled high with sour cream? This baked sweet potato is to die for, it feels a little naughty!
INGREDIENTS
- 1 small sweet potato
- 1/2 cup cooked quinoa
- Parsley
- 2tbs cranberries
- 30g Botanical cuisine pomegranate mint macadamia feta
METHOD
Slice the sweet potato down the middle, without cutting it in half. Pierce the potato with a fork and wrap it in foil. Bake it in the oven at 180 degrees for about 45mins. Pierce the outside of the potato before removing it from the oven to be sure it is ready to eat. If it is still hard place it back in for another 15mins. While that is baking bring to the boil a cup of water, once it is boiling add 1/2 cup of quinoa. Cook until the water has been fully absorbed by the quinoa. Once the sweet potato is cooked assemble accordingly and enjoy!
