Need something that is not so high in carbs and fats? This will save the day if you track macros or if you need an easy Sunday night dinner.
INGREDIENTS
- 6 egg whites
- 2tbs water
- granulated garlic
- pepper & salt
- red onion
- spinach
- cherry tomatoes
METHOD
Whisk the egg whites, water, 2 pinches of granulated garlic, s+p together until light and fluffy. Heat a non stick fry pan with a touch of coconut oil spray in it and pour the egg white mixture in. Don’t have your pan too hot. Let the egg white mixture go all the way around the surface of the pan and leave to cook for 4-5mins and than with an egg flip lift up one side of the omelette and place it on the other half so it is folded in half. Once that is done place the omelette on a plate and fry off half a red onion sliced, cherry toms and 2-3 handfuls of spinach with more garlic. Once cooked place on top of the omelette. PRESTO! How easy was that? It is honestly something i crave now. If you want to add some carbs to it one night I had some left over, thinly sliced, roasted sweet potato they I put on top of the omelette before folding it in half to cook again. It was so good, this is now something I crave!!
