Need something refreshing for your lunches? This salad is by far my favourite one of all time. It has zest, zing and most importantly protein!
Ingredients
- 2 cups of kale
- 1 cup of broad beans
- 1/2 pomegranate
- 1/2 green apple (cut into match sticks)
- Mint leaves
- 1 cucumber
- 2 celery stalks
- Dill leaves
- Watercress
- Avocado
- Salmon fillet
Method
Now this is a salad so there isn’t a lot of method to putting one of these together however!! i have left the amount out for a few ingredients due to the individuals taste buds. If you like mint leaves than add more than usual, if you’re not keen on celery than add a little less it really is up to the individual. However the salmon fillet is pan friend with a little coconut oil in the pan and a squeeze of lemon, pepper and salt.
