Zucchini Frittata Recipe
Ingredients
- 2 medium sized zucchini
- 600g sliced mushrooms
- Plain cabbage
- 1 tomato
- 500g of short cut bacon (sliced) – Nirate free if possible. Otherwise 1/2 avocado
- 1 brown onion
- 12 eggs
- 1 bunch of asparagus
Method
- Brown all vegetables in a pan oiled with coconut oil
- Whisk 12 eggs in a bowl
- Add browned vegetable ingredients and eggs into a well oiled baking dish, again with coconut oil
4 cut and divide into serving sizes, for myself it made 4 servings
- Store in fridge
