Need something to warm the soul on these chilly, Sydney mornings. Well I have the perfect recipe for you.
QUINOA & BROWN RICE PORRIDGE
- 1 can coconut milk
- 1tbs maple syrup
- strawberries or raspberries (or any fresh fruit)
- quinoa & brown rice
I must admit i did cheat in this recipe and luckily enough you can too with this one. I brought the organic 90sec brown rice/quinoa from coles.
METHOD
Bring the coconut cream and maple syrup to the boil in a small saucepan and then add the rice/quinoa mix and turn the heat down.
Leave to cook for 3-5mins and stir as you go.
And that is it!! Fantastic for meal prepping or for when you have just had enough with eggs. Mix your meals up so you don’t get bored of them and pack all your hard efforts in.
i re-heat and then add my fresh fruit, you could also add a dollop of coconut yoghurt on top and a sprinkle of fresh mint leaves.
