This is a new favourite dish of mine that i have enjoyed throughout out the colder months. A great source of proteins and fats and a kick of chilli. So easy yet so effective.
- Barramundi fillet
- coconut oil
- coconut milk (canned)
- 1 birds eye chilli
- 2 cloves of garlic
- fresh corriander
- beetroot noodles (any health food store)
Pan fry barramundi, chilli, garlic in the coconut oil and than add coconut milk and turmeric. Cook covered for 15mins.
place the noodles in boiling water and than you can plate up. Add the silverbeet and PRESTO!!
This is one great winter dish with so many health benefits to it to get you through the colder nights. Turmeric is a great anti-inflammatory and increases the antioxidant levels within the body. Chilli and garlic help with aiding digestion and the coconut milk will help increase your “healthy” fats intake. So enjoy this dish with the whole family!!
