A comforting winter dish that is very high in protein and will also raise an eyebrow..la de dah!
SERVES 4-6
INGREDIENTS
- 1KG SQUID
- 3TBS EXTRA VIRGIN OLIVE OIL
- 2 LARGE SHALLOTS, FINELY CHOPPED
- 2 CLOVES OF GARLIC, FINELY CHOPPED
- A HANDFUL OF FRESH PARSLEY, CHOPPED
- PEPPER & SALT
- 100ML WHITE WINE
- 240G TOMATOES, TIN & DRAINED
- VEGETABLE STOCK
- 200G BLACK OLIVES
METHOD
- Wash the squid down first and pat dry with paper towel and cut into rings
- Heat the olive oil in a large saucepan over medium heat
- Add the shallots, garlic and parsley and sweat these for a couple of minutes
- Stir in the squid rings and season with pepper and salt and turn the heat up for 1 minute
- Add the white wine and allow the alcohol to cook off
- Add the tomatoes and olives, cover with the vegetable stock, not alot just cover the squid rings
- Place the lid on and reduce the heat to medium and cook for 15mins
- Serve straight away and enjoy this winter warmer
